Missing Link Extraordinary Sausage is a small Calgary-based business, operated out of a custom-made commercial kitchen in our home near Peters' Drive-In. Mick (a typical Gemini) is often described as the Sausage Maker Extraordinaire, while Deneise (the methodical Leo) is the Extraordinary Administrator. Together, we produce over forty wild and crazy flavours of lean and delicious chicken sausage, all of which are Mick's own creations. We're often asked "what's in your sausage"? Since we make so many varieties, it's easier to answer the question, "what's not in them"? We pride ourselves on using quality, fresh ingredients and no "junk" in our product. Our sausage is made from double-ground skinless chicken leg/thigh meat and spices. We do not add fat, preservatives, fillers, binders, or any unidentifiable body parts. The vast majority of our flavours are both gluten-free and dairy-free.
Our sausages are huge (approximately 8 ounces each) and are sold in single or double packages. We also produce our signature Full Montys (sausage in the raw). These one-pound packs of ground sausage meat (without the casings) are great for pasta, pizza, soup, tacos, stuffing, meatballs, frittatas and whatever else your imagination can conjure up. We work hard to keep up with demand for our product, so we try to balance that hard work with a light-hearted manner and lots and lots of humour. We are proud to have a booth at the Calgary Farmers' Market at Currie Barracks. You can find us there every Friday and Saturday from 9-5, and Sunday from 9-4. Drop by our booth to say hi, and try some of our delicious sausage. We look forward to seeing you!
